Soft & Creamy Pili Nut Cheese

We have all heard of all kinds of dairy free cheese made with cashews, almonds, coconut and other nuts, but how about a cheese made with pili nuts? Yes you can imagine how delicious & creamy it's going to be!


Preparation time: 1.5 hours

Ingredients: 70g original pili nuts

1 tsp turmeric powder

1 inch knob ginger

1 garlic clove

1/2 tsp sea salt

1 cup of plant milk

4 Tbs olive oil

1/4 cup agar flakes

Juice of half a lemon

Instructions:

In a food processor blend the first set of ingredients so it's a fine powder. On the hob bring the wet ingredients to the boil and then simmer for 10 mins whilst stirring occasionally. Add the liquid into the food processor and blend for 2-3 mins until all mixed together and thickened. Then add in the lemon juice blend briefly and pour into silicone or plastic bowl or mould. Leave to set in the fridge for a few hours or until firm. Tap out of mould by squeezing the sides lightly. Store in the refrigerator for up for 5 days
