Raw Pumpkin & Turmeric Soup

This is a classic, easy pumpkin soup made with fresh pumpkin, pili nuts and turmeric that is very fast to make. Thick, creamy and full of flavour. Raw pumpkin is an essential product to include in our diet, simply because it has a priceless amount of goodness for our health. Firstly it's anti-parasite, which makes it a universal remedy for our intestines, promotes good vision, helps to keep healthy skin, has lots of vitamin A, C, riboflavin, potassium, manganese, and copper. Full of fiber, low in calories with no fat. Pumpkin seeds are extremely healthy because of high amounts if Zinc content in them. Combining them with pili nuts that are full of vitamin E and good plant-based fats makes a perfect synergetic effect on our body and mind.

Raw vegan pumkin & turmeric soup

Preparation time: 30 minutes

Ingredients: 1.5 cups of peeled & chopped pumpkin

40g Turmeric & ginger pili nuts

1 tablespoon of coconut cream

2/3 cup of water

1 clove garlic

1/4 of white onion chopped

a pinch of black pepper

1/2 tsp salt

1 tsp turmeric

1/4 smoked paprika

Instructions: Blend together pumpkin, coconut cream, pili nuts, red bell pepper and water using a high-speed blender (Our was 950 watts) and blend until smooth. It may take around 2 minutes to get that perfect warm and creamy smooth consistency. Add the rest of ingredients and blend all together until well mixed.

The last touch is to add some lemon juice and use a little olive oil. You can also try sprinkling some dried seaweed to make it more nutritious and beautiful. Your soup is ready! Enjoy!
