Pili Nut Vanilla & Passion-fruit Magnum

This delicious & creamy pili nut vanilla & passion-fruit magnum recipe was shared by Evelyn Rose who often creates vegan keto recipes using our pili nuts. Perfect for a hot sunny day.


  • Pili nuts: 1 packet original flavour

  • coconut cream: 2 cups

  • Vanilla vegan keto protein: 1/4 cup

  • Vanilla: 1 whole pod, scraped OR 1 Tsp bean paste

  • Monkfruit sweetener: 4 scoops / 1/8 teaspoon

  • Coconut oil: 1/8 cup, melted

  • Passion fruit: 3, halved with flesh scooped out


  1. Soak 1 packet of original pili nuts in hot water for around 30 minutes, or until soft

  2. Drain the pili nuts, place in a blender or food processor. Blend until smooth nut butter forms

  3. Add all other ingredients & blend until smooth

  4. Place 1 tablespoon into ice cream moulds, fill centre with passion fruit, then top and smooth off with more ice cream mixture

  5. Freeze for around 2 hours

  6. Enjoy!
