Green Monster Superfood Salad

If you haven't yet fallen in love with eating raw salads, you will after trying this amazing summer superfood salad by Rose Kitchen.

Preparation time: 30 minutes


Ingredients: Spinach

Cucumber (sliced)

Red cabbage (finely sliced)

Avocado (sliced)

Green olives (pitted)

Earth seeds

Sunflower seeds

Chili & spirulina hummus (optional)

Crunchy edamame (H&B)

Tahini

Original pili nuts

w/ olive oil & lemon (mixed together)


Instructions:

Add spinach, cucumber, red cabbage, avocado, olives & edamame beans into a bowl. Sprinkle earth and sunflower seeds. Mix olive oil & lemon to dress the salad. You can additionally top it with with tahini and spirulina hummus. Top with pili nuts on each avocado slice (as shown on the image).


*served with miso seedy crackers
