Vegan Pili Nut Cheese

This recipe is for the most delicious and creamy vegan cheese out there! Pili Nuts have the most fat content out of all nuts, so you can imagine how creamy this cheese is!

 


Preparation time: 40 minutes

Ingredients:

100g Pili Nuts (any flavour)
150ml water
1 ts nutritional yeast
1 tbs lemon juice
1 probiotic capsule
cheesecloth or clean thin towel
rubber band
strainer

Instructions:

Blend the pili nuts with water and probiotic, ideally, you should get a thick smooth consistency, if it's too watery add more nuts and if too thick add more water.
Once blended pour in the mixture into a strainer that's been pre-lined with cheesecloth and fix it with the rubber band. Place a heavy object on top so the water will drain out of cheesecloth and form a firm texture.
Leave aside for about 35 hours, that will allow the probiotic bacteria to start the fermentation process. After this time has passed, drain the water from the bowl and open the cheesecloth to transfer cheese into a small container. Add nutritional yeast, lemon juice, salt or any other herb of your preference. Once mixed well. It is ready to be served! Another option, if you feel like you'd prefer your pili nut cheese to be harder, put it in the fridge for 1-2 hours.
