Pili-Nut Ice Cream Sammies

Who isn’t charmed by ice cream sandwiches? Nestling your favourite ice cream between two cookies is never a bad thing, right? We don’t think so, which is why we’ve got a bunch of these pili nut ice-cream sammies shared by Evelyn Rose.

COOKIE INGREDIENTS:
  • Original pili nuts (Crushed)
  • Flax seed meal
  • Vegan Keto protein
  • Coconut flour
  • Almond milk
  • Almond flour
  • Coconut oil
  • Cinnamon
  • Apple cider vinegar
  • Vanilla paste
  • Monk fruit
  • Guar gum
  • Baking soda
  • Salt 🧂
ICE-CREAM INGREDIENTS:
  • Pili nuts: 1 packet original flavour
  • coconut cream: 2 cups
  • Vanilla vegan keto protein: 1/4 cup
  • Vanilla: 1 whole pod, scraped OR 1 Tsp bean paste
  • Monkfruit sweetener: 4 scoops / 1/8 teaspoon
  • Coconut oil: 1/8 cup, melted

COOKIE INSTRUCTIONS:

  1. In a large bowl, whisk together the vegan protein, coconut flour, almond flour, salt, flax seed meal, cinnamon, crushed pili nuts and guar gum.
  2. Whisk in the almond milk, vanilla paste, monk fruit, until the batter is smooth.
  3. Sift in the baking soda and apple cider vinegar, then fold the mixture with a spatula, being careful not to overmix, until just combined.
  4. Chill the dough for at least 30 minutes.
  5. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  6. Using an ice cream scoop, scoop the dough and shape into cookie sandwhich shapes. Put onto the prepared baking sheet, leaving at least 2 inches (5 cm) of space between each cookie and the edges of the pan so the cookies can spread evenly.
  7. Bake for 12-15 minutes, or until cookies just begin to brown.
  8. Let the cookies cool completely.

ICE-CREAM INSTRUCTIONS:

  1. Soak 1 packet of original pili nuts in hot water for around 30 minutes, or until soft
  2. Drain the pili nuts, place in a blender or food processor. Blend until smooth nut butter forms
  3. Add all other ingredients & blend until smooth
  4. Freeze for around 2 hours
  5. Enjoy!


FINAL INSTRUCTIONS:

  1. Take 2 cooled cookies and sandwich an ice cream slice in between, pressing firmly.
  2. Eat right away, or place on a parchment paper-lined baking sheet and freeze for 20 minutes.
  3. The sandwiches will keep in the freezer for up to 6 months in an airtight container.
  4. Enjoy!
