This easy recipe of pili nut infused buckwheat pancakes makes a perfect healthy breakfast. They are vegan and gluten-free. Buckwheat flour is very nutritious on its own, however if you want to add even more nutrition, you can add any nuts, seeds or dry fruits of your choice.
buckwheat flour – 1 cup
almond milk 1 cup
35g of Original Pili Nuts
1 ripe banana
1 tbsp of melted coconut oil
1 tsp natural baking soda
1/2 tsp cinnamon
maple syrup (optional)
Step 1. First, add to the bowl all the dry ingredients: flour, baking soda, cinnamon. Mix everything thoroughly.
Step 2. Mash a banana in blender and add all the wet ingredients to it: almond milk, coconut oil, and a liquid sweetener, if using.
Add chopped pili nuts and seeds to the batter, if using, blend well and transfer back to dry ingredients bowl and mix well together.
Step 3. Fry on a non-stick or lightly greased pan, adding small portions of the batter to the pan. Serve with maple syrup and wild blueberries :)
